For Thailand, In May, there are fewer tourists and you can often get a hotel with a walk-in. But if you want a particular hotel you might be better off with a reservation.
I find that cheap hotels are pretty easy to get in low season in Thailand. You may have to check a few places out to get a room so don't choose a hotel that is in an area of town that is remote from other hotels.
Lots of hotels with air are priced near or below 1000 baht. Smaller towns have some cheaper rooms.

I think it is best to go without booking, if you have the time and feel like comparing hotels at the spot. This way you can check out the hotel yourself and see if you really want to stay there or not. You can also bargain at the front desk. It also depends what kind of hotel you had in mind, of course.
Booking ahead can get you to a hotel that looks way less good than when you looked at the pictures... and with the construction site and hammering next door.

I think you've better book. Usually will be cheaper. You can still get room usually without booking especially now it's quite empty.
